Ingredients

  • 2 teaspoons unsalted butter

  • 1/4 cup onion, chopped

  • 2 cups potatoes, peeled and cubed

  • 1 cup carrots, sliced

  • 1/4 cup sour cream

  • Snipped chives

Directions

  • Melt the butter in a small skillet and add the onions. Sauté for 8-10 minutes or until golden brown.

  • In a large pot, add the carrots and potatoes and cover with water. Bring the water to a boil then cover and reduce the heat. Cook for 10-15 minutes or until the vegetables are tender.

  • Drain the vegetables and mash in a small mixing bowl. Beat in the sour cream.

  • Sprinkle with chives and serve.
