Ingredients

  • 2 teaspoons canola oil

  • 1 teaspoon cumin seeds

  • 1 teaspoon garlic, chopped

  • 1/2 teaspoon ginger, chopped

  • 1/2 chopped onion

  • 1 (14 ounce) can tomato sauce

  • 1/2 teaspoon salt

  • 2 (8 ounce) cans red kidney beans, undrained

  • 1 tablespoon chopped coriander

Directions

  • Heat the oil in a medium pot and add the cumin seeds.

  • Add the garlic and ginger when the cumin seeds are brown and stir for 1 minute.

  • Add the onions and cook until lightly browned.

  • Add the tomato sauce and cook for 2-3 minutes.

  • Add the salt and stir for 2-3 minutes.

  • Finally, add the kidney beans straight from cans and cook for 5-6 minutes while stirring occasionally.

  • Garnish with chopped coriander.
