Ingredients

  • 1 seedless cucumber

  • ½ cup peas

  • ¼ cup reduced fat sour cream

  • ¼ cup hummus

  • 1 tablespoon horseradishmustard

  • 1 sprig fresh dill

Directions

  • Cut the cucumber into 12 two-inch thick disks. Remove some cucumber from the disk making a bowl shaped indent. Place the cups on a sheet of paper towels to dry.

  • Blend the peas, horseradish mustard, and sour cream to make a paste.

  • Fill each indented cucumber disk with 2 teaspoons of hummus, and top the hummus with the pea paste.

  • Add a piece of fresh dill on top.
