Ingredients

  • 2 cups grated zucchini

  • 2 teaspoon vanilla extract

  • 2 cups whole wheat or whole grain flour

  • 1 teaspoon salt

  • 1/2 cup olive oil

  • 1 1/4 cup maple syrup

  • 1/4 cup cocoa powder

  • 1/4 teaspoon baking soda

Directions

  • Set oven temperature to 350°F. Mix together the flour, salt, cocoa, and baking soda. Add the vanilla extract, olive oil, and maple syrup and stir.

  • Fold in the grated zucchini to the mixture.

  • Grease and flour a 9X13 inch pan. Pour the mixture into the pan.

  • Bake the brownies for 25-30 minutes or until a toothpick, inserted into the brownies, comes out clean.
