Ingredients

  • Cooking spray

  • 1 medium onion, diced

  • 6 ounces fresh baby spinach

  • 2 large eggs

  • 1/2 cup egg substitute

  • 1/2 cup all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • Pinch of cayenne pepper

  • 1 1/3 cups skim milk

  • 1/2 cup feta cheese

Directions

  • Preheat an oven to 400°F.

  • Coat a 10 inch circular pan or pie dish with cooking spray.

  • Coat a skillet with cooking spray and cook the onion over medium heat until the onions are translucent.

  • Add the baby spinach to the skillet and cook until wilted. Remove the onions and spinach from heat and set aside to cool.

  • Crack the eggs into a large mixing bowl and whisk in the flour, baking powder, and salt. Add the milk and vegetable mixture to the eggs. Stir to combine.

  • Pour the mixture into the pie dish and sprinkle the feta cheese on top.

  • Bake in the oven for 25 minutes or until the center is set and the edges are golden brown.

  • When ready, remove the quiche from the oven and let set for 5 minutes before serving.
