Ingredients

  • 1 16-ounce package chopped frozen spinach, thawed and drained

  • 1/2 cup minced onion

  • 1/4 cup chopped green onion

  • 2 14.5-ounce cans creamed corn

  • 1 tablespoon canola oil

  • 2 teaspoons vinegar

  • 1 teaspoon salt

  • 1/2 teaspoon ground black pepper

  • 1/2 cup toasted bread crumbs

  • 2 tablespoons grated Parmesan cheese

Directions

  • Preheat an oven to 400°F.

  • In a casserole dish, mix together the spinach, onions, creamed corn, canola oil, vinegar, salt, and black pepper.

  • Spread bread crumbs and Parmesan cheese over top of the vegetable mix and bake for 30 minutes.
