Ingredients

  • 3/4 cup plus 2 tablespoons white sugar

  • 10 (about 4 cups) fresh Santa Rosa plums, sliced and seeded

  • 2 tablespoons cornstarch

  • 1/4 teaspoon ground cinnamon

  • 1 cup (110 grams) all-purpose flour

  • 1 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/4 cup (50 grams) butter

  • 1/4 cup (60 milliliters) milk

  • 1 egg, lightly beaten

Directions

  • Preheat oven to 350°F.

  • Add 3/4 cup of white sugar the next three ingredients (plums through cinnamon) to a large bowl, and toss to combine. Transfer the mixture to a 2-quart casserole.

  • Mix the remaining sugar, as well as the flour, baking powder, and salt in a medium bowl. Slide the butter into 1/2 inch cubes, and add to the flour mixture. Using a fork or pastry blender, cut the butter in until coarse crumbs begin to form. Add the last two ingredients to the mixture, stirring until just combined.

  • Place the batter on the fruit in strips or drops. Transfer the casserole dish to the oven, and bake the cobbler for 35 minutes. Serve immediately.
