Ingredients

  • 2 ounces pepper jack cheese

  • 4 boneless skinless chicken tenders or 4 chicken breast halves

  • 1 teaspoon taco seasoning

  • 1 tablespoon vegetable oil

Directions

  • Preheat an oven to 350 degrees F and grease a baking pan.

  • Cut the cheese into two strips. Pound the chicken with a meat mallet to flatten.

  • Cover the center of the chicken with a piece of cheese, fold the chicken over the cheese, and keep it together using toothpicks. Rub the taco seasoning over the outside of chicken.

  • Brown the chicken on both sides in a large skillet and remove the toothpicks. Transfer the chicken to the baking pan.

  • Bake the chicken uncovered for 25-30 minutes or until the chicken is thoroughly cooked.
