Ingredients

  • 6 white fish fillets (6-8 ounces each)

  • 6 slices tomato

  • 6 slices red onion

  • 6 rings green bell pepper

  • 6 thin lemon slices

  • 6 sprigs fresh rosemary

  • 6 tablespoons butter

  • 2 tablespoons lemon juice

  • 2 tablespoons olive oil

  • 1/4 teaspoon salt

Directions

  • Preheat an oven to 375°F.

  • Rip 6 equal-sized squares of aluminum foil and use half of the butter to grease them. Place one fillet of fish onto each buttered foil.

  • Mix the lemon juice, oil, and salt in a small bowl and pour 2 teaspoons of this mixture over each fillet. Place 1 slice each of onion, bell pepper, tomato, lemon, and a sprig of rosemary onto each fillet. Spread small pieces of the remaining butter between the six fillets.

  • To make a packet, fold the top of the foil over the fish and fold the edges over to seal. Add the packets to a baking sheet. Bake the fish for 10-15 minutes. The fish are done when they flake with a fork and are opaque.
