Ingredients

  • Cookies

    • 3/4 cup packed brown sugar

    • 1/2 cup honey

    • 1/4 cup butter

    • 1/4 cup dark molasses

    • 2 teaspoons instant coffee granules

    • 1 large egg

    • 3/4 cup finely ground almonds

    • 1/2 cup chopped candied orange zest

    • 3 1/2 cups all-purpose flour

    • 1 teaspoon ground cinnamon

    • 1/2 teaspoon baking soda

    • 1/2 teaspoon ground cardamom

    • 1/2 teaspoon ground cloves

    • 1/4 teaspoon ground ginger

    • 1/8 teaspoon salt

  • Glaze

    • 3/4 cup powdered sugar

    • 2 teaspoons lemon juice

    • 1 1/2 teaspoons water

Directions

  • Cookies

    • Combine the brown sugar, molasses, butter, and honey in a sauce pan. Cook over medium heat for about 3 minutes or until the sugar completely dissolves. Stir constantly and do not boil the mixture.

    • Pour the sugar mixture into a large mixing bowl. Whisk in the coffee and egg. Stir in the almonds and orange peel.

    • Pour the flour into a separate mixing bowl. Add the cinnamon, baking soda, cardamom, cloves, ginger, and salt to the flour and stir to combine.

    • Add the flour mixture into the sugar mixture and stir to form a stiff dough. Move the dough onto a flour dusted surface. Knead the dough for 1 minute or until evenly combined. Wrap the dough in plastic wrap and refrigerate for 24 hours.

    • Preheat an oven to 325°F. Cover 2 large baking pans with parchment paper and set aside.

    • Remove the dough from the refrigerator and divide it into 4 equal pieces.

    • Using 1 piece of dough at a time, form an 8 by 6 inch rectangle and cut into 16 pieces measuring 3x1 inches each.

    • Place the cut pieces onto the baking sheet leaving 1 inch between them. Bake for 20 minutes or until firm. Move the cookies to a cooking rack.

  • Glaze

    • Combine the powdered sugar, lemon juice, and water in a bowl and stir until the mixture is smooth.

    • When the cookies are warm, drizzle the glaze over the cookies with a spoon.
