Ingredients

  • 3 medium yams (sweet potatoes) (1½ cups)

  • ¼ cup brown sugar, packed

  • 1 teaspoon flour, sifted

  • ¼ teaspoon salt

  • ¼ teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg

  • ¼ teaspoon grated orange zest

  • 1 teaspoon soft tub dairy free margarine

  • ½ cup orange juice

Directions

  • Preheat an oven to 350ºF.

  • With skins on, cut the yams in half and boil until just tender, about 20 minutes. When cool, peel and slice into ¼-inch thick rounds.

  • In a small bowl, combine the sugar, flour, salt, cinnamon, nutmeg, and grated orange peel.

  • Place half of sliced yam pieces in medium-sized casserole dish and sprinkle with sugar mixture.

  • Dot with half of the margarine.

  • Add a second layer of yams and top with the rest of the ingredients in the order above.

  • Drizzle orange juice over the yams.

  • Bake uncovered for 20 minutes.
