Ingredients

  • Cooking spray

  • 3 extra large eggs

  • 1 1/2 cup skim milk

  • 1 1/2 cup unbleached all-purpose flour

  • 1/2 teaspoon salt

  • 1/4 cup unsalted butter, melted

Directions

  • Preheat an oven to 450 degrees F.

  • Place all ingredients in a blender and blend for 30 seconds. Allow the batter to stand for about 15 minutes.

  • Spray a muffin pan with cooking spray. Fill each cup about two-thirds full with the batter.

  • Bake for 20 minutes. Reduce the oven temperature to 350 degrees F and continue baking for 10 minutes or until the popovers are golden brown.

  • Cool before serving.
