Ingredients

  • Cake:

  • ½ cup unsweetened applesauce

  • 1 ½ cups sugar

  • 3 egg whites

  • 1 cup light sour cream

  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour

  • 2 cups frozen blackberries, thawed

  • Topping:

  • ½ cup packed brown sugar

  • 1 tablespoon all-purpose flour

  • 1 teaspoon cinnamon

  • 1 tablespoon butter, softened

Directions

  • Preheat oven to 350°F. Grease a 9x13 inch baking pan.

  • Combine the applesauce and sugar.

  • Beat in the egg whites.

  • Add the vanilla and sour cream.

  • Combine the baking soda and flour together and then mix into the batter.

  • Stir the blackberries into the batter.

  • Transfer the batter into the baking pan.

  • Combine the topping ingredients to form a crumbly mixture.

  • Sprinkle the cake topping on top of the cake batter.

  • Bake in the oven for 30–40 minutes, or until done.

  • When cooled, slice the cake into 16 pieces.
