Ingredients

  • 1 quart blackberries

  • 1/2 teaspoon salt

  • 1 tablespoon flour

  • 1/2 cup corn syrup or honey

  • 1 cup pancake mix

  • 2 tablespoons sugar

  • 1/2 cup non fat milk or water

  • 1 1/2 teaspoon sugar

Directions

  • Heat an oven to 350 degrees F.

  • Using non-stick spray, grease an 8x8 baking dish.

  • In a mixing bowl, mix the berries with the salt, corn syrup, and flour.

  • In another mixing bowl, combine 2 tablespoons sugar, milk, and pancake mix.

  • Pour the pancake mixture over the berries and sprinkle the remaining sugar on top.

  • Bake for 25-30 minutes or until golden brown.
