Ingredients

  • 2 pounds boneless chicken breasts, cut into bite-size pieces

  • 1-2 tablespoons olive oil

  • 1 garlic clove, crushed

  • 1/4 teaspoon ginger, ground

  • 3/4 teaspoon red pepper flakes

  • 1/4 cup apple juice

  • 1/3 cup light brown sugar

  • 2 tablespoons ketchup

  • 1 tablespoon apple cider vinegar

  • 1/2 cup water

  • 1/3 cup soy sauce

Directions

  • Using a large skillet, first heat the olive oil and then add the chicken.

  • Fry the chicken in the oil until it is slightly browned.

  • Remove the chicken from the skillet.

  • Add rest of the ingredients in the skillet and cook over medium heat until softened and mixed well.

  • Add the chicken and bring to a complete boil.

  • Lower the heat and let it simmer for 20 minutes.

  • Serve hot over white rice.
