Ingredients

  • 3 cups oatmeal raisin cereal

  • 2/3 cup finely diced dried apricots

  • 1/2 cup slivered almonds, toasted

  • 1 tablespoon butter or margarine

  • 2/3 cup light corn syrup

  • 1/4 cup packed brown sugar

  • 1/2 teaspoon ground cinnamon

Directions

  • Line a baking pan with foil and coat with cooking spray. Mix the cereal, apricots, and almonds together and set aside.

  • In a heavy pot, heat the butter, corn syrup, brown sugar, and cinnamon to dissolve the sugar and bring the mixture to a boil.

  • Boil for 2 minutes until slightly thickened while stirring and remove from heat.

  • Combine the sugar mixture with the cereal and add to the prepared pan pan. Press the mixture firmly in pan and cool for 30 minutes before cutting or serving.
