Ingredients

  • 1 tablespoon vegetable oil

  • 1 pound cubed boneless, skinless chicken breast

  • 1 1/2 teaspoons vegetable oil

  • 1 3/4 cups carrots, thinly sliced

  • 1/2 cup onion, vertically sliced

  • 1 teaspoon dried basil, crushed

  • 1 tablespoon water

  • 1 cup fresh or frozen snow peas

  • 1 medium baking apple, cored and thinly sliced

  • 2 cups cooked brown rice

Directions

  • In a large nonstick skillet, add 1 tablespoon of vegetable oil and the cubes of chicken.

  • Cook the chicken until lightly browned, then remove chicken from skillet.

  • In the same skillet, heat the remaining vegetable oil and add the carrots, onion, and basil. Cook until the carrots are tender.

  • Add the water and pea pods to the skillet and cook for about 2 minutes.

  • Remove the skillet from heat and add the apple slices and chicken. Stir to combine and serve immediately.
