Ingredients

  • 12 ounces dry whole wheat pasta

  • 2 tablespoons extra virgin olive oil

  • Juice from 1 whole lemon

  • Salt, to taste

  • Freshly ground black pepper, to taste

  • 2 cups zucchini, diced

  • 10 ounces grape tomatoes, halved lengthwise

  • 1/3 cup fresh parsley, minced

  • 6 ounces crumbled feta cheese

Directions

  • Cook the pasta according to package directions. Drain and rinse until cool. Add the olive oil, lemon juice, salt, and pepper and toss to combine.

  • Add the remaining ingredients and toss to coat.

  • Cover and chill for 1-2 hours before serving.
