Ingredients

  • 3/4 pound shrimp

  • 1/2 cup chopped red onion

  • 6 tablespoons lime juice

  • 1/4 cup chopped cilantro

  • 1 large peeled and chopped mango

  • 1 chopped tomato

  • 1 or 2 seeded (if desired) and chopped jalapeño peppers

  • 3/4 teaspoon salt

Directions

  • Peel and devein the shrimp. Chop the shrimp into small pieces and transfer to a bowl.

  • Into the bowl of raw shrimp, add the lime juice and stir.

  • Cover and chill the shrimp until it is pink in color, approximately 2 hours.

  • Add the onion, cilantro, mango, tomato, jalapeño peppers, and salt, and toss well.

  • Serve as an appetizer or with tortilla chips as a salsa.
