Ingredients

  • 1 onion, chopped

  • 1 teaspoon olive oil

  • 1/2 pound beef, sliced

  • 5 cups water

  • 1/2 teaspoon paprika

  • Salt to taste

  • 3 green plantains

Directions

  • In a large pot, cook onion in oil until translucent. Add the beef and cook until slightly browned on all sides.

  • Add five cups of water and bring to a boil. Cover and simmer over reduced heat for 30 minutes.

  • Add the paprika and stir into the mixture. Peel the plantains and chop if desired. Add the plantains to the soup and cook for 30 minutes.

  • Serve hot.
