Ingredients

  • 2 medium acorn squash, halved and seeded

  • 4 tablespoons fresh orange juice

  • 1/2 teaspoon ground ginger

  • 1/4 teaspoon ground nutmeg

Directions

  • Preheat an oven to 375 degrees Fahrenheit.

  • Place the four squash halves with the open side up into a shallow baking bowl.

  • Pour one tablespoon of orange juice into each opening.

  • Add the ginger and nutmeg evenly to each of the squash halves.

  • Wrap the bowl with aluminum foil and place into the oven.

  • Allow the squash to cook for 90 minutes or until desired consistency.

  • When finished take the squash out of the oven and let it sit for 5 minutes in order for the juices to settle.
