Ingredients

  • 6 tablespoons lime juice

  • 6 tablespoons chili powder

  • 4 teaspoons salt

  • 1/2 to 1 teaspoon cayenne pepper

  • 6 cups unsalted cocktail peanuts

Directions

  • Position the oven racks in the upper and lower thirds of the oven. Preheat the oven to 250°F.

  • In a large bowl, mix the lime juice, chili powder, salt, and cayenne pepper. Add peanuts to seasoning mixture and toss to coat. Spread and even layer of peanuts across two large rimmed baking sheets.

  • Bake for 45 minutes or until dry, stirring every 15 minutes. Allow to cool and store in an airtight container.
