Ingredients

  • 15 ounces canned cannellini beans, drained and rinsed

  • 2 red bell peppers, chopped

  • 2 eggs

  • 1 tablespoon fresh ginger, peeled and grated

  • 1 onion, grated

  • 4 garlic cloves, minced or pressed

  • 1/2 cup fresh parsley, chopped

  • 3/4 cup whole wheat bread crumbs

  • 3 teaspoons oregano, dried

  • 1/2 teaspoon black pepper

Directions

  • Preheat an oven to 350ºF.

  • Blend the beans and bell peppers until a chunky liquid forms.

  • In a medium bowl, mix the eggs, ginger, onion, garlic, parsley, breadcrumbs, oregano, pepper, and the blended bean and pepper mixture.

  • Place roughly two tablespoons of the mixture into hand and roll into a round ball; repeat and place all balls on to greased baking sheets.

  • Bake the bean balls for 15-20 minutes or until they are firm golden brown balls.
