Ingredients

  • 1 tablespoon olive oil

  • 2 pounds boneless, skinless chicken breasts, diced

  • 1 onion, diced

  • 3 cloves garlic, grated

  • 1 teaspoon salt

  • 1 teaspoon ground cumin

  • 1/2 teaspoon chili powder

  • 1/8 teaspoon cayenne pepper

  • 4 (15.5 ounce) cans white kidney beans, drained and rinsed

  • 3 1/2 cups low-sodium chicken stock

  • 2 cups frozen corn

  • 2 (4 ounce each) cans green chilies

  • Juice of 1 lime

  • 3/4 cup low-fat shredded monterey jack cheese

Directions

  • Heat the oil in a medium-sized saucepan and cook the diced chicken and onion for 5-7 minutes or until the chicken is no longer pink.

  • Stir in the garlic and all spices, cooking for an additional two minutes. Simmer for 25 minutes, then add the corn and green chilies and cook another 5 minutes.

  • Remove from heat and add lime juice and cheese.
