Ingredients

  • 3 tablespoons olive oil

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 1 (10 ounce) package frozen chopped spinach

  • 2 cups cauliflower, chopped

  • 1 cup Manchego cheese, shredded

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon salt

  • 1 cup liquid eggs

  • 1/4 cup skim milk

Directions

  • Preheat an oven to 425 degrees F.

  • Thaw the frozen spinach by microwaving for 2-3 minutes. Drain.

  • Microwave the cauliflower until warm, about 2-3 minutes, then pulse in a food processor until it resembles grain.

  • In a skillet, heat the oil over medium heat. Sauté the onions and garlic for 5-6 minutes. Add them to a large bowl and combine with the cauliflower, spinach, cheese, salt, and pepper.

  • In another bowl, whisk together the eggs and milk. Add this to the vegetable mixture and stir well.

  • Grease a 9x13 inch baking dish. Pour mixture into dish and spread evenly.

  • Bake the pie for 25-30 minutes or until lightly browned.
