Ingredients

  • 2 cloves garlic, minced

  • 2 teaspoons olive oil

  • 1 package (32 ounces) fat-free chicken broth

  • 2 whole chicken breasts, cubed

  • 1 package (9 ounces) cheese tortellini

  • 1 can (14.5 ounces) diced tomatoes

  • 1 package fresh baby spinach

  • 1/4 cup chopped fresh basil

Directions

  • Sauté the minced garlic in olive oil in a soup pot until golden. Add the chicken broth and chicken breasts and bring to a boil. Continue cooking for about 5 minutes over medium heat.

  • Add the tortellini and cook according to the package directions. When cooked, add the tomatoes, spinach, and basil. Cook until the spinach has wilted.
