Ingredients

  • 1 pound extra lean ground beef

  • 1/2 cup tomato paste

  • 4 cups onion, chopped

  • 4 cups green bell pepper, chopped

  • 4 cups red bell pepper, chopped

  • 1 cup fresh tomatoes, chopped

  • 2 teaspoons mustard, low sodium

  • 4 teaspoons ground black pepper

  • 2 teaspoons cayenne pepper, chopped

  • 2 cloves garlic, chopped

  • 2 scallions, chopped

  • 2 teaspoons ground ginger

  • 8 teaspoons ground nutmeg

  • 1 teaspoon orange zest, grated

  • 2 teaspoons thyme

  • 4 cups bread crumbs

Directions

  • Preheat an oven to 350ºF.

  • Combine all ingredients and mix well.

  • Form into a loaf shape and place into a 1-pound loaf pan (with drip rack if available).

  • Cover with aluminum foil and bake for 50 minutes, then remove foil and continue baking for 10 minutes.

  • Remove from oven and let stand a few minutes before slicing.
