Ingredients

  • 4 boneless skinless chicken breast halves (4 ounces each)

  • 1 1/2 cups water

  • 1 cup diced onion

  • 1/2 cup dry white wine

  • 1/2 cup sliced celery

  • 1/2 cup sliced carrot

  • 10 black peppercorns

  • 4 sprigs fresh parsley

  • 4 sprigs fresh thyme

  • 2 bay leaves

Directions

  • Add all of the ingredients to a large saucepan and bring the water to a boil.

  • Decrease the heat and allow it to simmer until the chicken is completely cooked (10-15 minutes).

  • Remove the saucepan from the stove and allow to sit in the poaching liquid for 10-15 minutes before serving.

  • If desired, chicken can be stored for a later time. To do this, allow the saucepan to cool for approximately 20 minutes. Then, put the chicken along with the poaching liquid into freezer bags for a later date.
