Ingredients

  • 6 medium potatoes, peeled and sliced into 1/4-inch pieces

  • 1 medium onion, sliced

  • 1/3 cup butter, melted

  • 1/2 teaspoon salt

  • 1/4 teaspoon chili powder

  • 1/8 teaspoon cayenne pepper

  • 1/8 teaspoon black pepper

  • 2 1/2 cups pepper jack cheese, shredded

Directions

  • Preheat an oven to 400 degrees.

  • Mix together the potatoes and onions in a bowl.

  • Combine the butter and spices. Pour the mixture over the potatoes and onions and toss to coat.

  • In a flat-bottomed 2-quart cooking dish, spread half of the potato mixture, then add half of the cheese and repeat procedure with the rest of the potatoes and cheese.
