Ingredients

  • 1 cup all-purpose flour

  • 1 cup cornmeal

  • 1/3 cup sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup nonfat milk

  • 1/2 cup egg substitute

  • 1/4 cup orange juice

  • 2 tablespoons canola oil

Directions

  • Mix together the cornmeal, flour, sugar, baking soda, baking powder, and salt in a large bowl.

  • Combine the wet ingredients (egg substitute, milk, orange juice, and oil) in a small bowl until blended together.

  • Add the wet ingredients into the dry ingredients, and stir until combined. The batter will appear to be fairly thin.

  • Pour the mixture into a greased 9 inch square baking dish.

  • Bake at 400°F for 20-25 minutes or until an inserted toothpick comes out clean.
