Ingredients

  • 1 tablespoon oil

  • 1 cup raw long-grain rice

  • 1 1/2 cups water

  • 1 tablespoon fresh lemon zest

  • 1 tablespoon lemon juice

  • 1/2 teaspoon ground turmeric

  • 1/4 teaspoon salt

  • 1⁄3 cup green onions, sliced

  • 1/4 cup fresh cilantro, chopped

Directions

  • Heat the oil in nonstick sauce pan. Add the rice, and sauté until the rice kernels are opaque. Add the water, grated lemon rind, lemon juice, turmeric, and salt. Cover, reduce the heat, and simmer 15 minutes. Stir in the green onions and cilantro.
