Ingredients

  • 2 bunches kale, stems removed

  • 1 small onion, chopped

  • 1 pound crimini mushrooms, cleaned and sliced

  • 1 tablespoon extra virgin olive oil

  • ½ cup fat free half and half

  • ¼ cup cashews, chopped

  • Salt, garlic powder, cumin, turmeric, and ground ginger, to taste

Directions

  • Steam the kale until it is bright green and tender.

  • Sauté the mushrooms and onions in the extra virgin olive oil, along with any desired seasoning.

  • When the mushrooms are cooked, add in the half and half.

  • When the kale is finished steaming, let it slightly cool, and chop it into pieces.

  • Combine the kale with the sautéed mixture. Sprinkle the cashews on top. Serve over meat or pasta.
