Ingredients

  • 6 large tomatoes

  • 3 6-oz cans tuna, drained

  • 3 tablespoons capers, chopped

  • 1 cup chopped parsley

  • Zest from 1 lemon

  • ¼ cup lemon juice

  • 1 tablespoon olive oil

  • ¼ teaspoon black pepper

Directions

  • Remove the stem end from each tomato and scoop out the seeds and pulp.
