Ingredients

  • 1 cup corn syrup

  • 3/4 cup peanut butter

  • 1 cup gluten free chocolate chips

  • 1/2 cup almonds, chopped

  • 1/2 cup cashews, chopped

  • 2 cups gluten free oatmeal

  • 2 cups gluten free crispy rice cereal

  • 1/3 cup flaxseed meal

Directions

  • Over low heat, heat the corn syrup and peanut butter in a medium sauce pan.

  • Remove the pan from heat when the consistency is smooth. Add 1/2 cup chocolate chips to the mixture.

  • In a large bowl, combine the remaining chocolate chips with the almonds, cashews, oatmeal, crispy rice cereal, and flax seed meal.

  • Pour the contents of the pan over the dry ingredients in the bowl and mix well to coat.

  • Put the contents of the bowl into a 9x13 inch glass baking dish. Spread and press to create an even layer.

  • Cut into rectangular bars when cooled.
