Ingredients

  • 3 cups white sugar

  • 1 1/2 cups corn syrup

  • 1 pinch salt

  • 2 cups liquid non-fat non-dairy creamer

  • 1/2 teaspoon vanilla extract

  • 1/2 cup walnuts, chopped

  • Butter, optional

Directions

  • Add the sugar, corn syrup, salt, and 1 cup of non-dairy creamer to a heavy saucepan. Heat mixture to 234-240°F or until it becomes a soft ball if a small amount of mixture is dropped into cold water. If the soft ball can be flattened when removed from the water, it is ready.

  • Adding small portions at a time, mix the vanilla and the remaining creamer into the saucepan until the mixture turns into caramel.

  • Butter an 8 x 8 inch baking dish. Remove the mixture from heat and pour into the dish. Sprinkle walnuts on top of the caramel.

  • Set caramel aside until cool, and then cut into pieces to serve.
