Ingredients

  • 1/4 cup sugar

  • 1 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 1/2 cups whole wheat flour

  • 1/4 cup olive oil

  • 1/4 cup 1% milk

  • 2 medium bananas, mashed

  • 1 teaspoon vanilla extract

  • 1/3 cup raisins

Directions

  • Preheat an oven to 375 degrees F.

  • Combine the flour, sugar, salt, and baking soda in a bowl and stir well.

  • Add the milk, mashed bananas, oil, and vanilla and mix until the dry ingredients are just moistened.

  • Fold the raisins into the mixture.

  • Fill paper-lined or non-stick muffin cups two thirds of the way full with muffin batter.

  • Bake the muffins for 15-20 minutes or until lightly brown. Remove immediately from pan.
