Ingredients

  • 2 pounds asparagus

  • 14 ounces canned mandarin oranges

  • 2 tablespoons olive oil

  • Salt and black pepper, to taste

Directions

  • To make sauce, drain the canned oranges and puree in blender until smooth.

  • Trim off the bottoms of the asparagus, and lay asparagus stalks on baking sheet. Drizzle the asparagus with olive oil, and season with salt and pepper. Roast the asparagus in a 425 degree F oven for 10 minutes.

  • Remove the asparagus from oven, and place in a skillet. Add the pureed oranges, and cover. Five minutes prior to serving, heat on high and cook until asparagus spears are tender.
