Ingredients

  • 5 cups water

  • 5 ripe plantains

  • 1 clove garlic, minced

  • 1 tablespoon butter

  • 4 green onions, chopped

Directions

  • Bring the water to a boil, peel the plantains and slice into 3 pieces each. Add the plantain pieces to the boiling water and cook on medium-high heat for 20 minutes or until a knife can cut through easily.

  • In a large bowl, add the cooked plantains and butter and garlic. Mash the combination with a potato masher until well mixed.

  • Garnish with minced scallions and serve hot.
